Tomatoes sauce

Ingredients

| 6 | pounds | Ripe tomatoes |
| 1 | pounds | Onions |
| 3 | Cloves Garlic | |
| 1 | Chilli | |
| 1 | teaspoon | Black pepper ground |
| 2 | Good pinches coarse salt | |
| ½ | teaspoon | Ground ginger |
| 1 | cup | Brown sugar. |
| 2 | cups | Vinagar |

Peel & tail tomatoes, finely chop onions & tomatoes, add all the other ingredients. Simmer for 2 hours, let cool then puree & re-boil sauce and bottle.
Is great with Ribs, Pork roast, chicken and smoked fish.
