Tomato & dill soup

Ingredients

2Onions, minced
2Cloves garlic, chopped
1teaspoonOlive oil
4cupsChopped plum tomatoes
1cupDiced sweet red peppers
¼cupDiced celery
2tablespoonsChopped green chilies
2cupsStock
2teaspoonsFresh dill, chopped
2tablespoonsChopped fresh cilantro
½teaspoonCayenne
¼teaspoonCumin

Directions

Combine all ingredients except dill, cilantro, cumin, cayenne & salt.

Bring to a boil & simmer for 25 minutes. Let cool slightly, then puree. Stir in remaining ingredients with some salt & pepper. Serve warmed or chilled.
