2 \N | Garlic clove; minced |
1 tablespoon | Shallot; chopped |
3 \N | Tomatillos; diced |
2 larges | Tomatoes, peeled, seeded, juice removed and diced |
1 teaspoon | Cognac or brandy |
1 tablespoon | Tarragon, fresh |
\N \N | Salt & pepper to taste |
Saute garlic & shallots in butter till transparent. Add tomatillos & tomatoes, saute 5 minutes. Add cognac, tarragon, salt & pepper.
Simmer 8 minutes. Serve over fish dishes.
