Thousand-island potato salad

Ingredients

1cupMayonnaise; regular or fat-free
½cupChili sauce; chunky
8mediumsRed potatoes; cooked and peeled, drain and cut into small chunks
1smallRed or white sweet onion; finely diced
1Red pepper; diced
1cupDiced celery
1teaspoonSalt
½teaspoonCurry powder
¼teaspoonPepper

Directions

Combine the mayonnaise and chili sauce.

Combine the remaining ingredients and add the mayo-chili sauce mixture.

Adjust seasonings.

Chill well, tossing a few times, allowing flavors to blend.

This can be made a day or two in advance of serving.

Yield: 10 servings.
