Thousand-island potato salad

Ingredients

| 1 | cup | Mayonnaise; regular or fat-free |
| ½ | cup | Chili sauce; chunky |
| 8 | mediums | Red potatoes; cooked and peeled, drain and cut into small chunks |
| 1 | small | Red or white sweet onion; finely diced |
| 1 | Red pepper; diced | |
| 1 | cup | Diced celery |
| 1 | teaspoon | Salt |
| ½ | teaspoon | Curry powder |
| ¼ | teaspoon | Pepper |
Directions
Combine the mayonnaise and chili sauce.
Combine the remaining ingredients and add the mayo-chili sauce mixture.
Adjust seasonings.
Chill well, tossing a few times, allowing flavors to blend.
This can be made a day or two in advance of serving.
Yield: 10 servings.
