Texas style cole slaw

Ingredients

1largeRed bell pepper; chopped
½cupFresh coriander; chopped
1largeGarlic clove; mashed
1Jalapeno pepper; chopped
1Onion; chopped
1cupOlive oil; or corn oil
½cupRed wine vinegar
1teaspoonSugar
Salt and pepper; to taste

Chop bell peppers and coriander. Mix together. Make adressing by combining the remaining ingredients. Toss with cabbage mixture and allow to stand for one hour before serving.
