2 cups | Yellow cornmeal |
1 cup | All-purpose flour |
3 tablespoons | Sugar |
2 teaspoons | Baking powder |
2 teaspoons | Salt |
¾ cup | Milk |
2 larges | Eggs, well beaten |
1½ teaspoon | Plus 1/4 cup vegetable oil |
2 mediums | Onions, finely chopped (about 1 cup) |
1 each | Green bell pepper, cored, seeded and finely chopped (1 cup) |
Combine the cornmeal, flour, sugar, baking powder, and salt in a bowl and stir until thoroughly blended. Make a well in the center of the dry ingredients and add the milk, eggs and 1-½ tsp. of the oil.
Stir the dry ingredients into the wet ingredients until just moistened. Add the onions and green peppers, and stir until just blended. Pour the remaining ¼ cup of vegetable oil into a large skillet over medium heat. Using a Tablespoon, form the batter into half-dollar-size cakes and fry, turning once, until golden brown on both sides, about 5 minutes. Drain on paper towels.
