Sweet kugel (low fat)

Ingredients

1cup1% low fat cottage cheese
48 ounce cartons egg substitute
8ouncesLow fat sour cream
¾cupRaisins
½cupSugar
2tablespoonsReduced- calorie stick margarine; melted
1teaspoonCinnamon
¼teaspoonSalt
16Ounce can unsweetened sliced peaches; drained
; coarsely chopped
8ouncesCooked egg noodles; (about 12 oz dry)
Vegetable cooking spray
cupCoarsely crushed cornflakes

Directions

OVEN: 350 Coat a 13 x 9-inch baking dish with vegetable cooking spray.

Combine first 9 ingredients in a large bowl; stir well.

Add noodles, toss gently to coat.

Sprinkle cornflakes over noodle mixture; cover and bake for 30 minutes.

Uncover and bake an additional 10 minutes.
