Susser reis (german milk rice)

Ingredients

QuantityIngredient
1cupWashed rice
4cupsWater
1pintRich milk
½cupSugar
1tablespoonButter
2Egg Yolk

Directions

Boil rice until tender. Drain off water. Add milk, sugar and butter. When done, remove from fire, and carefully beat in yolks of eggs. Turn into dish and sprinkle liberally with sugar and cinnamon.

(Egg yolks may be omitted.)
