Spanish rice (p/c)

Measure Ingredient

½ cup Rice
1 cup Onion; sliced
2 tablespoons Fat or drippings
3 cups Tomatoes; canned or fresh
1 cup Celery; diced
1½ teaspoon Salt
\N dash Pepper
1 teaspoon Sugar
1 \N Bay leaf
½ cup Water

Wash and drain rice. Saute onion in melted fat in cooker until tender. Stir in rice and remaining ingredients and mix. Pressure cook at 15 lbs. pressure for 10 minutes. Reduce pressure with cool water.

Remove bay leaf. Add leftover meat if desired or serve as a meatless dish. Serves 4.
