Note to see: Estelle rarely makes the same meal twice=97partly because she adapts her repertoire of recipes to what she has in the fridge, partly because she fears being stuck in a rut more than being stuck in an elevator. Hence, this family-famous "surprise" meat loaf. The big unknown? It's got a different vegetable medley every time she serves it.

Coat a shallow roasting pan with nonstick spray. In a nonstick skillet over medium heat, saute onions, pepper and garlic in oil until tender, about 4 minutes. Add zucchini and saute 2 minutes. Remove from heat. Whisk eggs, soy sauce, wine, paprika, oregano and black pepper until blended. Add turkey, crumbs and vegetable mixture. Mix thoroughly and pack firmly into a 5 x 11-inch loaf. Bake at 375F until done (180ø on a meat thermometer), about 1 hour, 10 minutes.

Per serving: 261 calories, 4½ g fat (16% of calories), 148 mg cholesterol, 305 mg sodium, 2 g dietary fiber.
