Standard chutney recipe

| 5 | cups | Seedless raisins; chopped |
| 6 | cups | Green apples; chopped - or |

| 2⅔ | cup | Onions; minced |
| ⅔ | cup | Salt |
| 5 | pounds | Red tomatoes; peeled and |
| Diced | ||
| 3 | pounds | Brown sugar |
| 2½ | pint | Cider vinegar |
| ¼ | pounds | Ginger; minced |
| ½ | pounds | White mustard seed |
| Cayenne pepper to taste | ||

Directions
Cook all together slowly in a gigantic kettle (or in batches) for 3 hr until thick. Put up in jars in the standard way, using a hot water bath.
:makes 1 gallon or so
