Standard chutney recipe

Ingredients

6cupsGreen apples; chopped - or
Pears
2⅔cupOnions; minced
cupSalt
5poundsRed tomatoes; peeled and
Diced
3poundsBrown sugar
pintCider vinegar
¼poundsGinger; minced
½poundsWhite mustard seed
Cayenne pepper to taste

Directions

Cook all together slowly in a gigantic kettle (or in batches) for 3 hr until thick. Put up in jars in the standard way, using a hot water bath.

:makes 1 gallon or so
