Yield: 8 servings

Measure Ingredient
¼ cup Lemon juice
2 tablespoons Lemon rind; chopped
5 \N Fresh figs; diced (or dried & soaked overnight)
2 \N Papayas; diced -OR-
4 cups Mexican papaya or honeydew
¼ cup Onion; finely diced
1 cup Green pepper or green cabbage; diced
2 mediums Bananas; thinly sliced

Pour lemon juice over figs and papayas and let sit 1 hour. Mix in remaining ingredients and pack tightly into a casserole dish. Bake in a 350 degree F oven for 20 minutes or microwave for 5 minutes.

Chill before serving.
