Ingredients

¼cupLemon juice
2tablespoonsLemon rind; chopped
5Fresh figs; diced (or dried & soaked overnight)
2Papayas; diced -OR-
4cupsMexican papaya or honeydew
¼cupOnion; finely diced
1cupGreen pepper or green cabbage; diced
2mediumsBananas; thinly sliced

Directions

Pour lemon juice over figs and papayas and let sit 1 hour. Mix in remaining ingredients and pack tightly into a casserole dish. Bake in a 350 degree F oven for 20 minutes or microwave for 5 minutes.

Chill before serving.
