Fresh plum chutney

Ingredients

QuantityIngredient
Canola oil
2Red onions; diced
1tablespoonMinced ginger
2Thai bird chiles; minced
1tablespoonBrown sugar; may need more
If plums are very tart
8Peeled and diced plums
½cupPlum wine
Salt; to taste
Freshly-ground black pepper; to taste

Directions

In a saucepan add a little oil and caramelize onions with ginger. Add chiles, sugar and plums. Season. Stir for 5 minutes then deglaze with wine.

Simmer on low heat until most of the wine is evaporated. Check for seasoning.
