Exotic chutney

Measure Ingredient
4 cups Fresh coriander leaves -; (firmly packed),
; washed well, dried
4 Scallions; coarsely chopped
1⅓ cup Sweetened coconut flakes; toasted, cooled
2 Jalapeno peppers; seeded, chopped
3 tablespoons White wine vinegar
2 tablespoons Grated fresh ginger
¼ cup Vegetable oil

In a food processor puree all the ingredients until smooth. Serve chilled.

This recipe yields 1½ cups.
