4cupsFresh coriander leaves -; (firmly packed),
; washed well, dried
4Scallions; coarsely chopped
1⅓cupSweetened coconut flakes; toasted, cooled
2Jalapeno peppers; seeded, chopped
3tablespoonsWhite wine vinegar
2tablespoonsGrated fresh ginger
¼cupVegetable oil

Directions

In a food processor puree all the ingredients until smooth. Serve chilled.

This recipe yields 1½ cups.
