| 1⅓ | cup | Sweetened coconut flakes; toasted, cooled | 
| 2 | Jalapeno peppers; seeded, chopped | |
| 3 | tablespoons | White wine vinegar | 
| 2 | tablespoons | Grated fresh ginger | 
| ¼ | cup | Vegetable oil | 
Directions
In a food processor puree all the ingredients until smooth. Serve chilled. 
This recipe yields 1½ cups.
