Spicy hummus

Yield: 4 Servings

Measure Ingredient
5 ounces Canned chickpeas; drained and rinsed (reserve 1 tsp. liquid)
1 teaspoon Sesame tahini
1 \N Garlic cloves; minced
1 teaspoon Lemon juice
¼ teaspoon Olive oil
¼ teaspoon Cumin
¼ teaspoon Coriander
⅛ teaspoon Cayenne pepper
\N \N White pepper
¾ teaspoon Parsley; minced

Combine all ingredients in a blender or food processor. Use 1 tsp. bean juice to moisten, if necessary. Process until smooth.

Per serving: calories 70, fat 1.9g, 24% calories from fat, cholesterol 0mg, protein 3.5g, carbohydrates 10.4g, fiber 2.6g, sodium 3mg.
