Spam golden rice salad

Yield: 6 servings

Measure Ingredient
1 can SPAM Luncheon Meat, cut in strips (12 oz)
2 cups Cooked wild rice, brown rice or white rice
½ cup Chopped carrot
⅓ cup Olive oil
2 tablespoons Sherry wine vinegar
¼ cup Snipped fresh chives
½ cup Coarsely chopped pecans, toasted
1 \N Yellow bell pepper, chopped
½ cup Golden raisins
\N \N Lettuce cups, if desired
1 tablespoon Chopped fresh parsley
1 \N Garlic clove
¼ teaspoon Freshly ground pepper


Combine all ingredients except lettuce cups. Cover and chill 4 hours or overnight. Serve in lettuce cups, if desired.

SHERRY CHIVE VINAIGRETTE: In container or electric blender, combine olive oil, sherry wine vinegar, snipped fresh chives, chopped fresh parsley, garlic, and freshly ground pepper. Cover and process until chives are minced.
