Spam golden rice salad

Ingredients

2cupsCooked wild rice, brown rice or white rice
½cupChopped carrot
cupOlive oil
2tablespoonsSherry wine vinegar
¼cupSnipped fresh chives
½cupCoarsely chopped pecans, toasted
1Yellow bell pepper, chopped
½cupGolden raisins
Lettuce cups, if desired
1tablespoonChopped fresh parsley
1Garlic clove
¼teaspoonFreshly ground pepper

Directions

SHERRY CHIVE VINAIGRETTE

Combine all ingredients except lettuce cups. Cover and chill 4 hours or overnight. Serve in lettuce cups, if desired.

SHERRY CHIVE VINAIGRETTE: In container or electric blender, combine olive oil, sherry wine vinegar, snipped fresh chives, chopped fresh parsley, garlic, and freshly ground pepper. Cover and process until chives are minced.
