Spam italian rice salad

Yield: 10 servings

Measure Ingredient
2 cups Rice
9 \N Green onions, chopped
1½ teaspoon Paprika
½ teaspoon Cumin
¼ cup Olive oil
2 cans Chicken broth (14 1/2 oz)
1 can SPAM Luncheon Meat, cut into strips (12 oz)
1 pack Frozen peas, thawed and drained (10 oz)
1 \N Green bell pepper, cut into 1/4\" strips
1 \N Red bell pepper, cut into 1/4\" strips
1 pack HORMEL sliced Pepperoni (3 1/2 oz)
½ cup Chopped fresh parsley

In 3-quart saucepan over medium heat, cook rice, green onions, paprika, and cumin in oil until onion is tender. Stir in broth. Cook over low heat 20-30 minutes or until rice is tender and all liquid is absorbed. Meanwhile, in skillet over medium heat, saute SPAM 4-5 minutes. Combine rice mixture, SPAM, peas, bell pepper, pepperoni, and parsley.
