Wild rice & spam

Yield: 6 Servings

Measure Ingredient
12 ounces Spam
2 cups Cooked wild rice
½ cup Chopped carrots
½ cup Chopped pecans
1 medium Yellow pepper, chopped
½ cup Raisins
Sherry chive vinaigrette
Lettuce cups, if desired
⅓ cup Oil
2 tablespoons Sherry
1 Clove garlic
1 tablespoon Chopped parsely
⅓ cup Snipped chives
¼ teaspoon Black pepper


Combine all ingredients except lettuce cups. Cover and refrigerate four hours or overnight. Serve in lettuce cups if desired. For the vinaigrette: combine all ingredients in a food processor and blend until minced.
