Sophie's chopped salad

Ingredients

1Head romaine lettuce; finely chopped
½cupCooked chick peas
½cupCooked red beans
1Cucumber; peeled and diced
2Tomatoes; diced
½cupFried blue corn tortillas; diced
½cupDiced Monterey Jack cheese
½cupDiced cheddar cheese
¼cupBalsamic vinegar
1teaspoonDijon mustard
½cupOlive oil
Salt and freshly ground pepper

Directions

Toss all salad ingredients together in a medium bowl. Mix together the vinegar and mustard. Slowly whisk in the olive oil and season with salt and pepper to taste. Dress the salad with the vinaigrette and serve.
