½Boston lettuce, head
6largesRomaine lettuce leaves
½cupRed cabbage, shredded
½mediumSweet red pepper
1smallZucchini, sliced
1smallCarrot, sliced
2tablespoonsDill, fresh, coarsely choppd
4tablespoonsLemon juice
4tablespoonsRice vinegar
½teaspoonBasil
½teaspoonThyme
¼teaspoonDry mustard

Directions

Here's a basic, but verhy tasty, fiber filled salad that you'll want to accompany a main meal. Make the salad and dressing in big batches so you'll always have it on hand.

Slice red pepper lengthwise into thin strips.

Tear the boston and romaine lettuces into large bite-sized pieces.

Place in a large salad bowl. Add the cabbage, peppers, zucchini, carrots and dill.

In a small jar, combine the lemon juice, vinegar, basil, thyme and mustard. Shake well and pour over vegetables, Toss well.
