Somers point salsa salad for 4

Measure Ingredient
1 \N Onion
½ pounds Calamari
4 ounces Marinated artichoke hearts
1 \N Head Bibb lettuce
2 tablespoons Black olives, sliced
1 cup Salsa
4 \N Sprigs cilantro

Slice onion and calamari. Microwave on HIGH, covered, about 3 minutes until squid turns opaque. Mix with marinated artichoke hearts and chill. At serving time, divide lettuce among 4 bowls, top with calamari mix, salsa, black olives and cilantro sprigs. Serve with piping hot cornbread.
