Sicilian style turkey sausage

5Feet small hog or sheep casings
5poundsTurkey meat-15% fat
2teaspoonsWhole fennel seed
2teaspoonsCrushed fennel seed
2teaspoonsCrushed red pepper-optional
2teaspoonsSalt, or to taste
2teaspoonsBlack pepper
1teaspoonGarlic powder OR-
2clovesVery finely minced garlic

Directions

Prepare casings.

Using fine disk, grind turkey, mix with remaining ingredients and grind again.

Stuff into casings and twist off into 3" links.

Cook in vegetable oil until browned and cooked through.
