Shrimp-apple salad

Yield: 6 Servings

Measure Ingredient
1½ pounds Frozen shrimp; cooked and diced
1 cup Diced celery
2 cups Diced apples
¼ cup Freshly squeezed lemon juice
2 tablespoons Salad oil
1 teaspoon Salt
3 \N Hard-cooked eggs; coarsely chopped
¼ cup Mayonnaise or salad dressing
\N \N Lettuce cups

Combine shrimp, celery, and apples. Mix together lemon juice, salad oil, and salt, and add to shrimp mixture. Chill. Just before serving, add eggs and mayonnaise or salad dressing. Serve in lettuce cups. Yield: 6 servings.
