Tropical shrimp salad

Ingredients

1poundsLarge shrimp; shelled, deveined,
½cupCelery; diced
1smallOnion; chopped
2Green onions (tops included); sliced thin
2tablespoonsFlaked coconut
2tablespoonsFresh lemon juice
cupMayonnaise; (more if you like)
½teaspoonCurry powder; or to taste
Salt & fresh ground black pepper; to taste
2teaspoonsFresh dill; chopped

Directions

Place shrimp in boiling salted water and remove after 5 minutes. Allow them to cool. Add all other ingredients, mix well. Serve chilled on bed of lettuce. Garnish with sliced tomatoes. Makes 3 to 4 servings.
