Measure | Ingredient |

1 pounds | Large shrimp; shelled, deveined, |
½ cup | Celery; diced |
1 small | Onion; chopped |
2 \N | Green onions (tops included); sliced thin |
2 tablespoons | Flaked coconut |
2 tablespoons | Fresh lemon juice |
⅓ cup | Mayonnaise; (more if you like) |
½ teaspoon | Curry powder; or to taste |
\N \N | Salt & fresh ground black pepper; to taste |
2 teaspoons | Fresh dill; chopped |
Place shrimp in boiling salted water and remove after 5 minutes. Allow them to cool. Add all other ingredients, mix well. Serve chilled on bed of lettuce. Garnish with sliced tomatoes. Makes 3 to 4 servings.
