Sausage spanish rice

Yield: 1 Servings

Measure Ingredient
1 pounds Sausage
2 tablespoons Sausage fat
1 \N Onion; sliced
1 cup Uncooked rice
3½ cup Canned tomatoes
2 cups Water
1 cup Diced celery
1½ teaspoon Salt

Saute sausage in large skillet. Remove sausage and pour out fat (all but 2 tablespoons or enough to fry onion and rice). Cook onion and rice in fat until golden brown. Add remaining ingredients and sausage. Bring to a boil.

Cover and simmer for 45 minutes or until rice is tender. Add extra water if necessary. (Ground beef may be used instead of sausage.) Posted to recipelu-digest by "Diane Geary." <diane@...> on Feb 4, 1998
