Sarah's zucchini bread

Yield: 6 Servings

Measure Ingredient
3 \N Eggs
1 cup Oil
2 cups Sugar
2 cups Zucchini, grated
3 teaspoons Vanilla
3 cups Whole Wheat Flour
1 teaspoon Salt
1 teaspoon Soda
3 teaspoons Cinnamon
1½ teaspoon Baking Powder
½ cup Nuts, chopped

Mix the eggs, oil, sugar, zucchini and vanilla. Add to this mixture the flour, salt, soda, cinnamon, baking powder. Fold in the chopped nuts. Grease and flour two 8x4x2 loaf pans. Evenly divide mixture.

Bake 1 hour in 325 degree oven.
