Rice wafers

Yield: 6 servings

Measure Ingredient
3 tablespoons Shortening
2 tablespoons Brown sugar
1 teaspoon Vanilla
2 cups Rice flour
½ teaspoon Salt
3 teaspoons Baking powder
1 cup Water, approx

Cream the shortening and the sugar. Add vanilla. Sift together the rice flour, salt and baking powder. Stir into the shortening mixture, alternately with water, adding just enough water to make a thick dough. Roll thinly on a board dusted with rice flour. Cut into desired shapes and place on greased cookie sheet. Bake at 325F until faintly brown, about 10 minutes. Origin: The Allergy Cookbook. Shared by: Sharon Stevens, July/95.
