Reuben mini-pizzas

Ingredients

| 2 | English muffins; split and toasted | |
| ¼ | cup | Thousand Island salad dressing |
| 4 | slices | Slices corned beef; very thin (1/4-oz each) |
| ¼ | cup | Well drained sauerkraut |
| 4 | slices | Swiss cheese; 3/4-oz each |
Directions
Place toasted muffin halves on ungreased cookie sheet. Top each half with 1 tablespoon dressing, 1 slice corned beef, 1 tablespoon sauerkraut and 1 slice cheese.
Broil 4-6 inches from heat for 1-2 minutes or until cheese is melted. If desired, sprinkle with caraway seed. Makes 4 mini-pizzas, 2 servings.
