Reuben mini-pizzas

Yield: 2 Servings

Measure Ingredient
2 English muffins; split and toasted
¼ cup Thousand Island salad dressing
4 slices Slices corned beef; very thin (1/4-oz each)
¼ cup Well drained sauerkraut
4 slices Swiss cheese; 3/4-oz each

Place toasted muffin halves on ungreased cookie sheet. Top each half with 1 tablespoon dressing, 1 slice corned beef, 1 tablespoon sauerkraut and 1 slice cheese.

Broil 4-6 inches from heat for 1-2 minutes or until cheese is melted. If desired, sprinkle with caraway seed. Makes 4 mini-pizzas, 2 servings.
