Recipe: cabbage soup

| 1 | each | Cabbage head |
| 10 | cups | Vegetable Broth (home made) |
| 6 | eaches | Slices Whole wheat bread |
| 8 | ounces | Fontina, sliced |
| 1 | cup | Parmesan grated |
Directions
slice the cabbage into thin strips. slice the onions thinly. melt butter under medium heat and then saute the onions about 5 or 6 minutes. Add the sliced cabbage and sweat stirring occasionally to blend flavors. Add broth and bring to a boil. Cover and lower heat to a simmer for about 1 hour. In oven proof bowls add a slice of wheat bread in the bottom of each. Ladle in the soup and cover with a slice of fontina cheese. Sprinkle with grated parmesan cheese.
