Hearty cabbage soup

Yield: 6 servings

Measure Ingredient
2 tablespoons Butter or margarine
1 \N Onion; chopped
2 \N Carrots; sliced
1 small Cabbage; shredded
6 cups Beef stock
½ cup Sunwhite Calrose rice
1 teaspoon Salt
\N \N Freshly ground pepper; to taste
½ teaspoon Paprika
½ teaspoon Nutmeg
2 tablespoons Chopped parsley
½ cup Sour cream; yoghurt or grated
\N \N Cheese

1. Heat butter in a large saucepan and saute onion, carrots and cabbage until well coated with butter. Add beef stock and simmer for 15 minutes.

2. Add Sunwhite Calrose rice and season with salt, pepper, paprika and nutmeg. Simmer another 25 minutes.

3. Serve sprinkled with parsley and topped with sour cream, yoghurt or cheese.
