Pumpkin pecan muffins

Yield: 24 muffins

Measure Ingredient
4 \N Eggs
2 cups Sugar
¾ cup Miracle Whip
16 ounces Pumpkin
1 cup Pecans; chopped
2¾ cup Flour
2 teaspoons Baking soda
½ teaspoon Salt
½ teaspoon Cinnamon

Heat oven to 400. Beat eggs and sugar with electric mixer on medium speed until well blended. Stir in miracle whip. Add pumpkin and pecans; mix well. Mix flour, baking soda, salt and cinnamon. Stir flour mixture into pumpkin mixture. Beat 2 minutes with electric mixer on medium speed. Spoon batter into greased muffin cups, filling cups full. Sprinkle batter with additional chopped pecans, if desired. Bake 15 to 20 minutes. Cool 5 minutes; remove from pans.
