Pumpkin apple muffins

Measure Ingredient
1 cup Unbleached flour
2 tablespoons Unbleached flour
½ teaspoon Baking powder
¼ teaspoon Baking soda
¼ teaspoon Salt
½ teaspoon Cinnamon
¼ teaspoon Nutmeg
¼ teaspoon Cloves
⅛ teaspoon Ginger
12 teaspoons Granulated sugar
2 tablespoons Applesauce -- at room
\N \N Temperature
1 \N Egg white -- whipped
1 teaspoon Vanilla
½ cup Pumpkin
1 small Apple -- peeled/shredded
¼ cup Raisins

Preheat oven at 350. Prepare 6 muffin tins with cooking spray and flour. In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and sugar. In another mixing bowl, combine applesauce, egg white, vanilla, pumpkin, apple, and raisins. Mix dry ingredients with wet ingredients just until moistened. Use an ice cream scoop to fill muffin tins two thirds full. Bake, 35 minutes or until browned.
