Potato-vegetable casserole

Ingredients

| 1½ | cup | Plain low-fat yogurt |
| 2 | teaspoons | Dijon style mustard |
| ⅛ | teaspoon | Black pepper |
| 12 | ounces | Peeled, boiled potatoes, thinly sliced |
| 2 | cups | Each: cooked cauliflower and thinly sliced carrots |
| ½ | cup | Chopped scallions or green onion |
Directions
In small bowl combine first 4 ingredients. In shallow 4 quart flameproof casserole arrange potatoes, cauliflower and carrots; sprinkle with scallions and top with yogurt mixture.
