Potato-vegetable casserole

cupPlain low-fat yogurt
2teaspoonsDijon style mustard
teaspoonBlack pepper
12ouncesPeeled, boiled potatoes, thinly sliced
2cupsEach: cooked cauliflower and thinly sliced carrots
½cupChopped scallions or green onion

Directions

In small bowl combine first 4 ingredients. In shallow 4 quart flameproof casserole arrange potatoes, cauliflower and carrots; sprinkle with scallions and top with yogurt mixture.
