Pistachio cheese spread

Ingredients
| Quantity | Ingredient | |

| 2 | packs | (8-oz) cream cheese; softened |
| 2 | cups | Grated sharp Cheddar cheese |
| ½ | cup | Chopped pistachios |
| ½ | cup | Green onions or chives |
| 3 | tablespoons | Brandy or apple juice |
| 1 | Clove garlic; minced | |
| ⅛ | teaspoon | Cayenne pepper |
| Chopped pistachios; for garnish | ||
Directions
Combine all ingredients except nuts for garnish. Beat until thoroughly blended (or process in food processor 30-45 seconds).
Refrigerate cheese mixture; when firm, shape into 4 balls and roll in chopped pistachios. Or spoon into four 3-1/2x2-½-inch crocks; top with chopped pistachios.
