Pistachio cheese spread

Ingredients

2packs(8-oz) cream cheese; softened
2cupsGrated sharp Cheddar cheese
½cupChopped pistachios
½cupGreen onions or chives
3tablespoonsBrandy or apple juice
1Clove garlic; minced
teaspoonCayenne pepper
Chopped pistachios; for garnish

Directions

Combine all ingredients except nuts for garnish. Beat until thoroughly blended (or process in food processor 30-45 seconds).

Refrigerate cheese mixture; when firm, shape into 4 balls and roll in chopped pistachios. Or spoon into four 3-1/2x2-½-inch crocks; top with chopped pistachios.
