¼ cup | Sugar |
1½ tablespoon | Cornstarch |
1 can | (13-oz) crushed pineapple in light syrup |
¼ cup | Water |
1 teaspoon | Grated lemon zest |
½ teaspoon | Vanilla extract |
In a 1-½ quart microwave-safe dish, combine sugar and cornstarch. Mix well with a fork. Drain and reserve the syrup from pineapple. Slowly add the reserved syrup to the sugar/cornstarch mixture, stirring well until smooth. Stir in the crushed pineapple, water, lemon zest and vanilla. Cover the dish (leave a small vent if you cover with plastic wrap) and microwave on HIGH (100% power) for 4-½ to 6-½ minutes, or until mixture thickens.
Stir every 2 minutes.
