Peanut rice

Quantity | Ingredient | |

3 | cups | Cooked Rice |
1 | cup | Celery; finely chopped |
½ | cup | Salted Skinless Peanuts; finely chopped |
Mix together rice, celery, and salted peanuts in nonstick pan. Cover and steam until hot, about 5 minutes. Add 1 to 2 tablespoons water if too dry.
NOTES : The popular Southern name goober is from an African word for peanut, nguba. Delicious with chicken or ham.
