Peaches & cream (rubey)

Yield: 6 Servings

Measure Ingredient
2 cups Nonfat sour cream
4 tablespoons Candied ginger -- minced
¼ cup White sugar
2 pounds Fresh -- ripe peaches

In a medium bowl, mix together sour cream, ginger and sugar. Slice 6 medium peaches into cream mixture and coat cut edges with cream.

Serve with Ginger Shortcakes.

I find that the skin adds some extra flavor; and unless the skins come off with your fingers, I find it a nuisance to bring a pot of water to boiling just to submerge the peaches for a minute to loosen their skins. Nonfat sour creams vary a lot in flavor; be sure to select a good one or this dish will be severely compromised. (I use Knudsen.)
