Party squash

Ingredients

| 1 | pounds | Sliced squash or eggplant |
| 1 | teaspoon | Sugar |
| ½ | cup | Mayonnaise |
| ½ | cup | Minced onion |
| ¼ | cup | Chopped green pepper |
| ½ | cup | Chopped pecans |
| 1 | Egg; slightly beaten | |
| ½ | cup | Grated cheese |
| Salt & pepper to taste | ||
| Bread or cracker crumbs | ||
| ½ | Stick butter or margarine | |
Directions
Cook squash, drain & mash. Add other ingredients except butter & crumbs.
Put in 2-quart casserole. Top with crumbs & dot with butter. Bake 35-40 minutes at 350. Serves 8.
