Spanish squash casserole

1 | pack | Spanish Quick Brown Rice (uncooked) |
1 | medium | Squash (of choice) |
1 | medium | Bell pepper; chopped |
1 | pounds | Stewed tomatoes; OR... Fresh tomatoes |
Directions
Mix all ingredients in an oiled 9 x 13 baking dish. Cover tightly with aluminum foil or tight fitting baking dish lid. Bake for 30 minutes at 350 F. or until squash is tender.
