Pareve microwave fudge

Yield: 1 Servings

Measure Ingredient
3½ cup Confectioners Sugar; (powdered)
½ cup Cocoa
¼ teaspoon Salt
1 \N TBS. Corn Starch
½ cup Margarine; cut into pieces
¼ cup Rich's Milk
1 \N TBS. Vanilla
½ cup Chopped Nuts or Mini Marshmallows; (optional)

SOURCE: my girlfriend and I made up together years ago.

In a microwaveable bowl stir first 3 ingredients together until well blended. Drop margarine pieces into sugar mixture. Microwave on HIGH 1-2 minutes, or until margarine is melted. Add Rich's milk stirring until smooth. Microwave on HIGH 1-1½ minutes longer until mixture is thick and creamy. Do not overcook.

Stir in vanilla, nuts or marshmallows. Pour into wax paper lined 8" square pan and refrigerate until firm. Cut into squares and enjoy.
