Ingredients

1eachClove garlic, minced
2smallsOnions, chopped
1eachGreen pepper, cored, seeded, and finely chopped
10mediumsPotatoes, peeled and diced
2teaspoonsHot Hungarian paprika
2eachesTomatoes, peeled, seeded and diced
1teaspoonSalt
Pepper to taste
1poundsFirm Hungarian sausage, cut into 1/4 inch slices (substitute
Kielbasa)

Directions

Heat the oil in a saucepan and saute the garlic, onion and green pepper for 3 minutes. Add the potatoes, and saute for five minutes.

Dust with the paprika and stir to coat potatoes. Add the tomatoes, salt and pepper and enough water to cover the ingredients. Cover the saucepan and cook for 15 minutes or until the potatoes are almost tender. Add the sausages and cook for five minutes. Drain and serve hot. Serve alongside crusty peasant bread and a cucumber salad.
