Yield: 4 Servings
|4 ounces||Cooking oil|
|2 \N||Onions, finely chopped|
|1 \N||Garlic clove, crushed|
|¼ teaspoon||Caraway seeds|
|1 cup||Water (up to 2 C)|
|\N \N||Salt to taste|
|4 pounds||Potatoes, peeled and sliced thin|
|2 \N||Green peppers, seeded and cut into strips|
|4 \N||Tomatoes, peeled, seeded and chopped|
In a heavy-bottomed casserole, heat the oil and fry the onions and garlic. Add the caraway seeds, paprika and water. Add the potatoes, peppers and tomatoes. Simmer for thirty minutes.
