350 grams | Dark brown sugar |
120 millilitres | Cream |
½ teaspoon | Bicarbonate of soda |
1½ teaspoon | Butter |
125 grams | Chopped nuts |
\N \N | Finely grated rind of 1 orange |

Dissolve the brown sugar, cream and bicarbonate of soda in a saucepan over medium heat, stirring constantly until it comes to the boil.
Boil the mixture, without stirring, until it becomes a thick syrup and will form into a medium/soft ball when a little is dropped into cold water.
Remove the pan from the heat and add the butter, nuts, orange rind and salt. Beat until the mixture becomes thick. Turn out into a buttered 20cm square tin and, when cold, cut into pieces.
