|6 \N||Lettuce leaves|
|6 slices||Roast topside; trimmed of fat|
|1 pounds||Cottage cheese; (450g)|
|1 \N||Granny smith apple quarted; cored and sliced|
|1 \N||Orange; sliced across|
|12 \N||Black olives|
1. Top each piece of bread with a lettuce leaf. Fold the beef slices in half and put on one side of each slice.
2. Put a mound of cottage cheese on the other side.
3. Put slices of apple and a twist of orange in the middle, and garnish with olives.

NOTES : Though not a main course dish, these open sandwiches provide a substantial and healthy lunch, particularly in the summer. The beef is more moist if it has been cooked rare.
