Open face turkey and chutney sandwiches

4 | Bays english muffins; split, lightly toasted | |
Baby lettuce leaves | ||
½ | pounds | Sliced cooked turkey |
8 | slices | Tomato; halved |
8 | slices | English cucumber; halved |
Directions
Combine cream cheese, chutney and curry powder; spread on toasted muffins.
Top with lettuce. Alternate slices of turkey, tomato and cucumber; garnish with a dollop of spread and cucumber.
Notes: Cream cheese punctuated with the mild heat of mango chutney and curry powder makes an intriguing partner for leftover turkey breast and cool tomato and cucumber slices. Serve these open-face sandwiches as a light end-of- Thanksgiving Day supper. S: 4 Bay's website -- www.bays.com
