Oatmeal-buttermilk pancakes

Measure Ingredient
1¼ cup Low-fat buttermilk
½ cup Quick-cooking oats
½ teaspoon Vanilla
1 tablespoon Vegetable oil
1 Egg
1¼ cup All-purpose flour
2 tablespoons Brown sugar
½ teaspoon Baking soda
½ teaspoon Salt

Combine buttermilk, oats, and vanilla in a small bowl; let stand 10 minutes, stirring occasionally..Stir in oil and egg..

Combine flour, brown sugar, baking soda and salt in a large bowl, stir well. Add oat mixture to flour mixture, stirring until smooth.

Spoon about ⅓ cup batter in hot nonstick skillet...Turn when tops are covered with bubbles and edges look cooked.
