Oat and brown sugar crumb topping

Ingredients

| 1 | cup | Unbleached or whole wheat |
| Flour | ||
| ¾ | cup | Rolled oats (not instant) |
| ⅔ | cup | Packed light brown sugar |
| 1 | teaspoon | Ground cinnamon |
| Pinch of salt | ||
| ½ | cup | (1 stick) cold, unsalted |
| Butter cut into 1/4 in. | ||
Directions

Mix the flour, oats, brown sugar, cinnamon and salt in a large bowl.
Add the butted and rub into the dry ingredients until you have a uniform, dampish crumbs. If it seems overly clumpy, rub in a tbs. or two of more flour. Store whatever you aren't using right away in a sealed plastic bag in the freezer. Makes about 2½ cups.
