Yield: 7 Cups
|1 cup||White vinegar|
|8 cups||Peeled & thinly sliced Kirby|
|\N \N||Cucumbers (3 lbs) Handful of chopped scallion or dill (optional)|
Source: Mr. Food - From My Kitchen to Yours In a large bowl, combine vinegar, water, sugar and salt; mix well. Add cucumbers and toss until well coated.
Cover and chill for at least 2 hours, or overnight. These will keep several weeks refrigerated in a sealed container.
Suzy's Mom's Variation: Slice one large onion into thinly sliced rings and add to mixture along with the cucumbers.
