Mr. food's sunday afternoon pickels

Yield: 7 Cups

Measure Ingredient
1 cup White vinegar
1 cup Water
¼ cup Sugar
1 teaspoon Salt
8 cups Peeled & thinly sliced Kirby
\N \N Cucumbers (3 lbs) Handful of chopped scallion or dill (optional)

Source: Mr. Food - From My Kitchen to Yours In a large bowl, combine vinegar, water, sugar and salt; mix well. Add cucumbers and toss until well coated.

Cover and chill for at least 2 hours, or overnight. These will keep several weeks refrigerated in a sealed container.

Suzy's Mom's Variation: Slice one large onion into thinly sliced rings and add to mixture along with the cucumbers.
