Mom's potatoes

Yield: 1 Servings

Measure Ingredient
6 larges -or-
8 mediums Red potatoes, boiled, cooled, diced
1½ cup Sour cream
1 can Condensed cream of chicken soup or cream of mushroom soup or cream of chicken and mushroom soup (undiluted)
1¼ cup Grated sharp cheddar cheese (up to 1-1/2)
¼ cup Melted butter
¼ cup Finely diced onion (up to 1/3)

Boil 6 large or 8 medium red potatoes till done. Let cool till you can handle them. Dice potatoes. (No need to peel unless you want to.) Preheat oven to 350 F. Butter a 9" x 13" pan.

Add remaining ingredients to potatoes and mix till combined. Put potato mixture into pan and bake for 30 - 35 minutes. Remove from oven.

Sprinkle top of potatoes with some bread crumbs and a little additional grated cheese (maybe ¼ cup or to taste). Put dish under broiler till browned to your taste on top.
