Mom's potatoes

Ingredients

8mediumsRed potatoes, boiled, cooled, diced
cupSour cream
1canCondensed cream of chicken soup or cream of mushroom soup or cream of chicken and mushroom soup (undiluted)
cupGrated sharp cheddar cheese (up to 1-1/2)
¼cupMelted butter
¼cupFinely diced onion (up to 1/3)

Directions

Boil 6 large or 8 medium red potatoes till done. Let cool till you can handle them. Dice potatoes. (No need to peel unless you want to.) Preheat oven to 350 F. Butter a 9" x 13" pan.

Add remaining ingredients to potatoes and mix till combined. Put potato mixture into pan and bake for 30 - 35 minutes. Remove from oven.

Sprinkle top of potatoes with some bread crumbs and a little additional grated cheese (maybe ¼ cup or to taste). Put dish under broiler till browned to your taste on top.
