Ingredients

| 2 | mediums | Firm, ripe tomatoes, peeled, seeded, coarsely chopped |
| 1 | large | Onion, minced |
| 1 | small | Green bell pepper, cored, seeded, and minced |
| 1 | cup | Red wine vinegar |
| 1 | teaspoon | Minced fresh cilantro |
Directions
Place all of the ingredients together in a glass (nonreactive) bowl and stir to mix well. Cover with plastic wrap and store for 1 hour so that the flavors can mix. Use with grilled meat. Makes 2 cups.
